In the UK, we say bagpipes (i.e. it's a plurale tantum) - unless followed by certain other nouns such as music to give bagpipe music.
We would never play a bagpipe because
a) there is a bag but more than one pipe
b) they sound dreadful (like a cat playing with a sharp instrument)!

I've heard some incredible songs with bagpipes, but I wouldn't be able to listen to an entire CD. Once, we were camping at a music festival. Each morning, a man would play one song on his bagpipes, the sonorous sound echoing through the hills & valleys. That was cool.
However, starting bagpipes going sounds like stepping on sick geese.
