Yeah, I have the same issue with other riddles. It seems that even though the riddles get larger the average times do not increase the same way. I dont know, maybe people just use hints and then they finish a lot faster, but usually it takes me a while to spot that one thing that brings it together then.

4-5 star puzzles take me from 20 to 30 minutes to solve. And yet I always find that the average doesn't go beyond 15, which is insane to me. The only reason I can think of is that most people are more lenient with the amount of hints they allow themselves to use.

This one took me 15:06. The average is almost always way lower than my time.
I'm not great at working on a time limit and when I try to rush it makes things less fun; I'm more prone to freezing up or making casual mistakes.
I've just decided not to stress about what other people's times are and enjoy the puzzle at my own pace.
Sometimes I get distracted irl, wander off to another tab for a bit, or futz with my music, and I don't worry about that ruining my time because I'm not trying to beat anyone else, just solve the puzzle for my own enjoyment.
Some people enjoy making it a race and finishing as fast as possible, so they likely bring down the average, and aside from hints there are settings that can make it easier like automatically crossing out completed columns and rows.
I saw a comment once that said they turned on auto check for mistakes and just filled out the whole puzzle then deleted the ones marked wrong, and I don't understand the point of that? Isn't solving it the fun part?

If you close the puzzle unfinished (after saving) and then reopen it, the timer will start from 0 again. Depending on how much is left to do, you can complete it in a very short amount of time. And this last short time goes into the statistics and lowers the average.

If you look for hint: there is an easy contraction in the middle columns.
Took a bit of figuring out, and then like an old jumper, one tug on an errant thread, and it all fell apart. Great experience.

The most important is the intersection of 2-1-1-3-2-1-2 column and 4-4-2 row, it has to be an X, because previous row is either the finish of 2 or 1, either way its an X. After this it's much easier :)

For some reason I had a really hard time seeing the picture, I had to zoom out a bunch and see it at thumbnail size for me to finally realize that one part is a mustache, and after that I could finally see the face.
Very tough, took a while but I managed to complete it without hints
